Queso de bola ("ball of cheese") is an aged, semi-hard cheese that originated in the Netherlands and is named after the town of Edam in the province of North Holland. It is traditionally sold in spheres with a pale yellow interior and a coat of red paraffin wax. We use only the authentic Marca Piña Queso de Bola, imported from Holland, which stays faithful to the recipe and salt content of the 1900s. It is customarily served topping the Filipino ensaymada with slices of jamón during Noche Buena -- the traditional feast of Christmas Eve which lasts until the early hours of Christmas Day.

For me, this is better than the classic ensaymada. The queso de bola is a perfect topping! I put it in the microwave longer than 10 seconds to get that melted cheese, and it's absolutely perfect. Nakakabaliw sa sarap!
